Here are my favorite vegan/plant-based cookbooks. I hope that you find helpful. There are SO many cookbooks out there now! There is a link at the bottom of this page with a much larger list; I will try to keep adding to it as I learn of new titles (or old ones that I didn’t know about).
Jazzy Vegetarian Classics by Laura Theodore is a great cookbook for simple meals that you can make with a few ingredients. I believe all of the recipes are whole foods plant based, although she doesn’t really specifically say that. My favorite recipe is the Coconut Encrusted Tofu Cutlets (p. 183) with Maple Scallion Dipping Sauce (p. 45).
Isa Does It! is a great cookbook, not only because the recipes are delicious but the way they made the book, the binding is so easy to use in the kitchen. It sits flat on the counter and you never lose your page! The recipes in here are much easier to make than in Veganomicon (the vegan Bible) so it is not so overwhelming. I have 2 favorites: Red Lentil Thai Chili (p. 167) and Just Chocolate Cake with Gooey Ganache (p. 287).
The Vegan Table by Colleen Patrick-Goudreau was one of my first vegan cookbooks. Her recipes are easy to make and don’t have many ingredients (and certainly no weird ones.) I particularly like the Curried Better-Than-Chicken Salad (p. 285)
This one is not a cookbook but a blog with TERRIFIC recipes. We have made so many of their recipes and haven’t found one that we didn’t like or that didn’t work. Our all time favorite recipe is Lasagna, which we have brought to every holiday gathering for the past 2 years! And a very close second is the Pumpkin Pancakes. I have doctored that pancake recipe to be apple and another time, chocolate chip! They always come out fluffy and yummy!
